Black Bean Quinoa Burgers! YUM!

Ingredients:

1 cup tri-color blend of Quinoa (measure when dry)

1 sweet onion chopped

3 cloves of Garlic chopped

15oz can of Black Beans

1 Egg Beaten

1 Cup Whole Wheat Flour

2 cups chicken broth

1 small sweet potato (cooked)

1 can of Ro*Tel Diced Tomatoes and Green Chiles (Original)

Cumin

Chili Powder

Cinnamon

Cayenne Peper

Cinnamon

Garlic Salt

Step 1: 

Add quinoa, two cups of chicken broth,  and any/all of the following spices Cumin, Chili Powder, Cinnamon, Cayenne Peper, Cinnamon, Garlic Salt. Bring to a boil. Reduce heat and cover let simmer until all liquid is gone. About 10-15 minutes. 

Step 2:

Sauté onions and garlic in olive oil. 

Step 3:

In a large mixing bowl add cooked quinoa, washed black beans (drained), Ro*tel, and cut up (cooked) Yam. Mix together

Step 4:

Add Onions and garlic and mix all ingredients together. 

Step 5: 

Add egg and flour mix everything together with your hands. 

Step 6:

Mold into burgers! Grease a cookie sheet or pan and put into a preheated oven for 20 minutes at 350 degrees. Flip and cook for another 15 minuets. 

To Top:

Add avocado and a lemon sour cream. 

(Lemon sour cream, 1/2 cup of sour cream to 1/4 squeezed lemon.)
